Karen’s White Brownies

I know this photo is completely unrelated to the recipe, but we ate all the brownies before I thought to take a picture... so I thought I'd share this cutie with you instead.

Guest recipe post today!  And really from a guest. That is, a guest visiting up here at the ranch just last week.  Karen brought a plate of these brownies with her and kindly shared them with us.  Sorry, no picture, as we consumed them all quite rapidly.  But I requested the recipe so we (OK, I!) could make more.  Here’s Karen’s recipe. These are good.  I hope you try and enjoy.  I know I will.

Karen’s White Brownies

1 cup plus 2 tablespoons all purpose flour
1 tsp baking powder
1/4 tsp salt
1/3 Cup butter
3/4 Cup packed light brown sugar
1/2 tsp vanilla extract
1 large egg
3 bars (6 oz) Nestle Toll House Premier White Baking Bars, chopped (Karen used white chocolate morsels, and I’d probably do the same – they were perfect)

Preheat oven to 350 degrees.  Grease 9-inch square baking pan.

Combine flour, baking powder and salt in small bowl.   Beat butter, sugar and vanilla in small bowl until creamy.  Beat in egg.  Gradually beat in flour mixture.  Stir in baking bars.  Press into prepared pan.

Bake for 18-22 minutes or until golden brown.  Cool in pan on wire rack.

Oh, is this the Snowshoe Hare? Could have been his tracks we saw last week on our snowshoe! He’s much cuter than the White Brownies!

Karen, you’re right, the tracks we saw last week were from the Snowshoe Hare. This little guy is “just” a cottontail. The Snowshoe is – like the Ptarmigan – all white in winter, but a tawny brown/grey in summer. On years like this when the snows come late, they still turn white (their winter coat) before the snows come, and you’ll see what looks like snowballs rolling UP HILL!

Janice, I admit I thought of something along those lines, perchance a white chocolate bunny… :-)

OH MY! We are so going to try these. I hope my mom looks at this post because she will be thrilled! :) She is a white chocolate lover!

And I love the bunny, it made me smile! I had bunnies when I was young. I went to the feed store the other day to get some food for Ms. Grill Chicken and there was the softest bunny (and possibly animal) I had ever felt…. like a soft velvet!

Beka, I made your mom’s biscuits and the boys LOVED them. Tastier than most. Will share that recipe as a future “guest recipe post!”

Has Grill Chicken laid any eggs yet this season?Forrest gathered 3 yesterday! Despite the snow, they decided it was time to begin laying again.

Hmmmm, for just a moment I thought this was going to be a recipe for rabbit stew…

But anything with chocolate goes over pretty well at our house too!

Grill has not been laying eggs much since it got cold… BUT it was so funny, she laid one each day for about a week when I was home over Christmas… but none since and none a while before that!
